New England’s favorite outdoor dining experience, the Whim Dinner Series at Smolak Farms, continues to impress guests this summer with some of the region’s best chefs in an intimate, multi-course farm-to-table dinner featuring fresh ingredients grown on-site by the Smolak team. On August 7th, 2019, join Chef Daniel Gursha of Ledger Salem as he kicks off the evening with appetizers such as Cucumber Salad with herb vinaigrette, sumac, gansett feta, and chive blossom and Wood Grilled Carrots with herbed cottage cheese, toasted pecans, maple, chervil, and chili. For an entrée, guests can dive into a Smoked Chicken Roulade with braised swiss chard, schmaltz potatoes, and tomato conserva, and last but not least, dessert will be a Blueberry Beet Cake with vanilla bean anglaise, pickled blueberries, candied beets, beet greens, and flowers.
On August 14th, 2019, Chef Matthew Marquis of Alto Forno will take over Pine Grove, presenting guests with an Italian five-course meal. To start, guests can stuff their stomachs with a Smolak Farms Greens Salad with pickled radishes, confit baby heirloom tomatoes, cucumbers, crispy coppa, and parsley-grilled bunch onion vinaigrette and Yellowfin Tuna with Smolak Farms melon, lavender vin cotto, avocado crema, fennel pollen, and potato chips. The entrée will be Bianco Bolognese consisting of Smolak Farms kale, Mezzi rigatoni, and Pecorino Toscano. For the fourth course, guests can enjoy a Grilled Berkshire Pork Chop with Smolak Farms turnip puree, collard green pesto, and peach mostarda. Saving the best for last, guests can end their night with a savory treat with the Smolak Farms blueberry Panna Cotta consisting of gluten free cinnamon streusel and mint agrodolce. Whim Dinner Series at Smolak Farms takes place every Wednesday evening through August 28th, 2019, beginning at 5:30pm at the farm located in North Andover, Massachusetts.
