This class covers how to cook and eat using seasonal, locally-grown ingredients, while adhering to the tenets of the Mediterranean Diet. Recipes include dishes from Greece, Turkey, Italy, Israel as well as the Caucases and Iran. The emphasis is on fresh vegetables and whole foods that are available locally and in season.
