Pumpkin pie is almost a given in the Thanksgiving spread, but if that’s the only pie you make for this holiday, you’re missing out on the potential of an entire category of outstanding desserts.
In this hands-on class, we’ll prove that pies, tarts and even a seasonal cake can be much more than simple sweets: They can be balanced, complex dishes that embrace the acidity of lemons, the bitterness of toasted walnuts and the richness of browned butter.
We’ll start with a pie crust and tart shell that are perfect for a wide range of pies and tarts and give you clarity on frequently asked-questions about chilling, blind-baking and judging doneness. From there, we’ll play around with fillings to satisfy every sweet tooth. And don’t worry: There will be pumpkin pie.
