traditional cajun rice made “dirty” with buttermilk brined chicken liver, green bell pepper, celery, onion & spiced with cayenne & black pepper.

creamy corn stew with sweet red bell peppers, onions & fire roasted grape tomatoes braised with smoked bacon

SECOND COURSE

Po' boy
french bread slider with fried sweet rock shrimp with shredded carrot cabbage slaw, vine ripe tomatoes & cajun remoulade

Jambalaya
traditional recipe with andouille sausage, dark meat chicken, sweet rock shrimp, stewed seasonal vegetables & creole spices

Traditional stew with dark meat chicken, celery, sweet bell peppers, onions & cajun spices in a okra seafood stock
