​In this class, Rob Fitzgibbon will guide students through the "cupping" process, the industry-standard method for tasting and evaluating coffee quality. It's like a wine tasting but with coffee. First is an informative presentation to understand coffee as an agricultural commodity, learn how it's grown, processed and roasted, and see how it's been consumed throughout history. Students will then be led in a fun interactive exercise in which they try three different coffees and document what they smell and taste using stickers and a flavor wheel. The event concludes as participants review and discuss their shared perceptions regarding taste, aroma, quality, and mouthfeel. Instructor: Rob Fitzgibbon
