Join Flora Spivak and Tracy Chang for fermentation class!

Flora will be teaching sauerkraut and lacto-fermented pickles

Tracy will be teaching sake kasu pickles (kasuzuke), using sake kasu from Farthest Star.

Learn the art and science of vegetable fermentation from the organizer of the Somerville Fermentation Festival, Flora Spivak!


Fermentation is an ancient practice of food preservation and flavor transformation that spans cultures and traditions. In this class, you will learn two different methods of vegetable fermentation and take home a quart-sized jar each of homemade sauerkraut and salt-brined pickles, along with printed recipes. 

Menu:

- sake kasu pan con tomate

- shio koji salmon with pickles

- gochujang chicken karaage with sauerkraut

- miso sesame cookie



Flora's Bio


Flora Spivak is the organizer of the Somerville Fermentation Festival, an annual event which celebrates the world of fermented foods and the cultures - both human and microbial - that create them. A former teacher of chemistry and biology at Harvard University, Flora combines her scientific understanding with her passion for food and flavor and her love of sharing knowledge. She has been teaching fermentation workshops in and around the Boston area since 2021.

**Please note that scheduling is subject to change based on instructor availability. If a class doesn’t reach the minimum number of participants (6 guests), we reserve the right to reschedule you for another session.


This class does not require any previous cooking experience. 

Children are welcome as ticketed students. 

Young children under 10 must be supervised.

Guests will be eating and drinking on site as well as taking food home from the class. 

Vegan offerings will be available. 

All noodles contain gluten.

PAGU is a nut-free establishment.

Metered street parking is available.
