Lovers of the Dar Cafe hummus, this one is for you! This 2 hour class is all about Arab mezze, or the small dishes that grace a Middle Eastern table as the appetizer course before a meal.
We'll learn to make the essentials, like an unbelievably creamy hummus with a side of lamb+beef meatballs and a minty labne spread, plating both dips the traditional way. To round out our trio of dips, we'll make a spicy whipped feta borrowed from our cousins in Greece.
We will also make a crunchy fattoush salad, featuring the brightest raw summer veggies, and a roasted eggplant and tomato salad.
At the end of class, we will sit and enjoy the dinner we made together with lots of warm pita, chat about Arab culture, and discuss where to find the best Middle Eastern produce in Boston.
NOTE: This class is suitable for all adults of any skill level, and perfect for meat eaters and vegetarians (there will be one optional lamb+beef component). No pork will be served during class. A variety of nuts and raw vegetables are present on this menu and cannot be removed.
Class will be held at the Food Lab at The Foundry in Cambridge, MA and led by Lala Thaddeus, owner/operator of Dar Cafe.
