The word philoxenia (literally translating to "love of strangers" or "friendship to strangers") acts as the heart of Greek hospitality, and is infused into traditional Mediterranean cooking through honest ingredients and cultural dishes. Through hands-on learning and chef demonstrations, Wilfredo Guerrero, Culinary Director of Saloniki Greek, and Alavee Hassan, Executive Chef at Trade, will guide you in creating a traditional Greek feast. Prepare lemon potatoes and a spinach-and-feta “spanikopita” salad to accompany the star of the meal: a tender and flavorful leg of lamb. Learn how to roast a whole lamb leg, emulsify a rich au jus, and slow-braise meat, for a feast that will transport your guests to the shores of the Aegean Sea.
