Though the US isn’t historically known for cheese, many incredible American cheeses are now being produced nationally and even locally. Here in MA, we’re lucky enough to be close to Vermont—an eastern cheese Mecca, with notable cheeses coming from other Eastern states as well. In this class we’ll try unique New England cheeses to understand the influence of American terroir and technique on old-world-influenced cheese styles. Instructor: Hannah Morrow
