On Sunday evening, April 23, Cafe ArtScience Executive Chef, Brandon Baltzley, will host chef and longtime friend, Jonathan Brooks of celebrated Indianapolis restaurant, Milktooth, for a collaborative lamb dinner. To kick off the season, the seven-course prix fixe dinner will highlight the best of early spring produce and several preparations of lamb. This will be the first event in a series of guest chef dinners hosted by Baltzley at Cafe ArtScience.
Collaborative courses from Chefs Brooks, Baltzley, and Cafe ArtScience Pastry Chef, Giselle Miller will include:
Baby brussels sprouts, borscht, dill, lamb bacon
Shrimp brodo, radish, lamb fat, mint
Maine lobster, lamb sweetbreads, fiddlehead ferns, pine
Mussels, caramelized potato, pickled lamb tongue
Morel mushroom, smoked lamb leg, preserved blueberry, coffee
Lamb shoulder, mustards, stinging nettle, seaweeds
Melon, olive oil, hyssop
Sheep's milk, rhubarb, sorrel, green tea
Milktooth, a breakfast, brunch and lunch-only restaurant in an airy, converted garage space in Indianapolis, has received countless honors since opening in the fall of 2014, including spots on Conde Nast Traveler’s “World’s Best Restaurants” list and Bon Appetit’s annual “Hot Ten.” Brooks’ daytime-only menus at Milktooth are known for pushing boundaries by combining familiar brunch dishes with his favorite hearty, savory and unexpected “anytime” ingredients.
Reservations for Cafe ArtScience’s Milktooth Lamb dinner are available throughout service between 5:00 and 9:00pm on Sunday night, April 23, and can be made through Reserve or by calling the restaurant at 857-999-2193. The dinner costs $135 per person, with optional wine and cocktail pairings available for an additional $95 per person.
