Yes, brunch is an American meal, but you can have the best at The Ritz Hotel in Madrid. A Spanish brunch is full of flavors with fire and sparkles. Our brunch starts with pan tomaquet; Catalan tomato bread. We’ll make Spanish potato salad, and this recipe is like no other. We’ll also make the famous tortilla española, a Spanish omelet. We’ll bake huevos flamenca, Andalusian flamenco eggs in a sofrito bed with layers of chorizo and serrano ham. Torrijas is the sweet part of our brunch: This is a new version of century’s old torrijas recipe, an upgrade to your French toast, caramelized and full of flavors of cinnamon, vanilla and citrus. Natural orange juice and cava from Catalonia will make mimosas. This class is open to beginner and advanced speakers of Spanish.
