This is a hands-on, intermediate to advanced cooking class that explores the refined techniques and visual artistry of the cold kitchen. Designed for culinary students, professionals, and home cooking enthusiasts, this class focuses on cold preparations, knife skills, visual presentation, and the balance of flavor. You'll begin with an overview of garde manger history, safety, and sanitation, then progress through guided instruction and hands-on practice in precision slicing, decorative garnishes, and elegant plating. Throughout the class, you’ll prepare and present a series of sophisticated dishes including salmon rillettes, endive boats, carpaccio, compressed melon towers, and shrimp ceviche verrines. The class culminates in a collaborative plating showcase and tasting, where students assemble their creations for group feedback and discussion. By the end of the experience, you’ll gain both the technical skill and creative insight needed to elevate your approach to cold dishes and visual presentation.
