We love beer, and we love cheese, so we're putting the two together in a pairing series celebrating local farms and creameries. We'll select a new farm each time and prepare a curated flight of different cheese varieties and beer styles for you to enjoy! Menu and serving details below.


July 2019: The Grey Barn (Chilmark, MA)


Bluebird
This raw milk blue cheese is most like a mild stilton. Aged at least sixty days, the natural rind encases a yellow hued paste that acts like warm butter on your tongue when young, and a bit more piquant, lactic, and salty as it ages. The aroma of Bluebird brings thoughts of summer - of mowed lawns and the scent of sun and salt on your skin.


This blue is paired with Elmo Oatmeal Stout - this rich, malty beer has silky chocolate notes that complement the intense flavors of the cheese perfectly.

Eidolon
Toasty and nutty with hints of tropical fruit and sour cream; when ripe this bloomy rind cheese has a slightly salty and savory flavor. Its delectable texture melts on your tongue. Eidolon is not only unique because it is hand-made on Martha’s Vineyard, but also because the seasonal changes in the pastures gives way to subtle changes in the milk infusing this cheese with its own terroir. This cheese is aged in caves for about four weeks and turned daily as development until the soft white bloomy rind appears.


Eidolon is paired with Crystal Pale Ale. This single hop pale ale features notes of grapefruit zest and a dab of honey sweetness, great for a partnership with bloomy rind.

Prufrock
The delicate yet pungent paste of this washed-rind cheese has a beautiful, thick, soft yielding texture. The rustic orange rind that has developed in the cave encases a delectable soft paste that is golden in color.


Prufrock pairs well with Ginger Spectacular. Brewed with fresh ginger root and honey, this zippy, lemony farmhouse ale will complement the cheese and hold up to its flavors.

We'll be serving these cheeses alongside the recommended beer flight for $25. Eventually, we plan to sell cheese by the wedge in the taproom (ordered a la carte) but for now we're getting to know our local options! We would love to hear your feedback as we explore this new program.
