Speaker: Sarah Booth, Ph.D., is the Interim Center Director and heads the Vitamin K Lab at the JM USDA Human Nutrition Center on Aging at Tufts University. Dr. Booth, one of the world’s leading experts on Vitamin K, and her lab provide all analysis of the Vitamin K composition of food for the U.S. government and food industry. She is also a professor nutrition at the Freidman School of Nutrition Science and Policy and is passionate about teaching the next generation of nutrition scientists.
